INGREDIENTS:

1 cup sliced vegetables (onion, tomato, zucchini)

1 egg

2 egg whites

salt and pepper

1 Tbs crumbled feta or grated parmesan

DIRECTIONS:

1. Preheat oven to 350 degrees.

2. Coat a small nonstick ovenproof pan with a small amount of olive oil and sauté veggies over medium heat.

3. Whisk together the egg and egg whites. Whisk in salt and pepper to taste. Pour into pan and stir until slightly solidified.

4. Bake 15 to 20 minutes or until almost firm.

5. Sprinkle with cheese and bake until firm.

* Makes 1 serving. 173 calories.
