Chocolate Chip Cookies

INGREDIENTS

1 1/2 Cups raw cashews

3/4 cup dates, not soaked

1/2 cup raw cacao chips

1/2 tsp. vanilla

1/8 tsp. salt

PREPARATION

1. Put the cashews and salt in the food processor fitted with the S blade and process until chopped.

2. Add the dtes, and vanilla, and process until the mixture starts to stick together

3. Pulse in the chocolate chips

4. Using 1 tablespoon measure, form bite-size cookies about 1/4 inch thick and 1 inch in diameter

5. Store in airtight container, these cookies will keep for 1 month in the refrigerator and 3 months in the freezer.
