Cucumber Salsa

 

* Yield 5 cups

INGREDIENTS

4 cups finely chopped seeded peeled cucumber

1 cup finely chopped seeded tomato

1/2 cup chopped red onion

4 Tbsp minced fresh parsley

2 jalepeno pepper, seeded and chopped

3 Tbsp. minced fresh cilantro

2 garlic cloves, minced or pressed

1/2 c sour cream* (see recipe below)

3 tsp lemon juice

3 tsp lime juice

1/2 tsp ground cumin

1/2 tsp seasoned salt

Tortilla chips

PREPARATION

1. In a small bowl, combine the first seven ingredients.

2. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt.

3. Pour over cucumber mixture and toss gently to coat.

4. Serve immediately with or without chips

Sour Cream:

1/2cup cashews, soaked 4-6 hours

1/4 cup water

1/8 cup olive oil

3/4 tablespoons lemon juice

¼-1/2 teaspoons salt

Blend all ingredients in Blender until completely smooth.
