The Garnish that is a Super Food!

 

Have you ever had a small piece of parsley situated just right on your plate as a garnish?  For years I never even knew you could eat the stuff.  So what makes this plate decoration a super food? 

Parsley contains a combination of nutrients that make it a powerful super food.  It contains myristicin, limonene, eugenol, and alpha-thujene which have been shown to inhibit tumor cell formation. This makes parsley a warrior against cancer.

Parsley is rich in flavonoids which give it strong anti-oxidant properties.  It also contains much more vitamin c than an orange in fact; ½ cup of parsley provides you with 133% of the recommended daily allowance for Vitamin C.   Vitamin C is important for healthy immune function and youthful skin & joints.  Parsley contains more iron than spinach and, it contains carotenoid anti-oxidants lutein and zeaxanthin which enhance eye function and help the body neutralize damage from UV radiation.

On top of all the nutrients we have discussed, parsley is super rich in chlorophyll, the energy producing substance that gives herbs and plants its characteristic green color. Chlorophyll helps to alkalize the body, purify blood, and form new red blood cells. In addition, the chlorophyll and flavonoids in parsley help to enhance cellular glutathione formation. Higher levels of cellular glutathione allow the body to detoxify and heal more effectively.  Chlorophyll is also an anti-mutagen, so parsley reduces an odor causing bacteria which causes bad breath and body order.  So it is a natural mouth wash and deodorant!

Parsley is also a source of folic acid. Folic acid is an important anti-inflammatory and as such can help with cardiovascular disease and brain deterioration.    Parsley is a powerful diuretic that reduces blood pressure and enhances kidney function.  

Juicing parsley seems to add more benefits to this super food.  Although there are not studies to back up some of the claims. Juiced parsley has been used to enhance skin and hair texture.  It may reduce inflammation and mucous formation in the body.  Due to these factors, many individuals see positive result using parsley to reduce symptoms of asthma, allergies, bronchitis, & urinary tract infections.

Parsley can be cultivated year-round.  So you can always have access to this super food.

The next question is how can you add parsley to your diet? It adds a nice fresh taste when you add it to your salads.  Parsley can be added to soups.  You can Google “recipes that include parsley” to increase your intake of parsley.  I personally juice parsley every day.  I add it to many green vegetables and you always get a much fresher tasting juice.
