Quick Raw Carrot- Ginger Soup

Ingredients:

  • 2 cups Organic Coconut Milk
  • 2 cups cut up carrots
  • 1/4 cup fresh lemon or lime juice
    fresh organic ginger peeled about 1 1/2 inch long….sliced
  • 1 haas avocado and you can put the nut in if you would like…don’t forget to peel the avocado
  • 1/4 teaspoon cayenne or black pepper
  • 1/4 salt if you choose

Directions:

  1. Chopped cilantro or parsley or basil for garnish
  2. Put all ingredients except your garnish in the blender and blend until very smooth. Adjust seasonings as needed…..
  3. Garnish with your herbs!!!!

    Do you really put the avocado pit in the blender?

    I have been playing around with the Raw Brownie Bites recipe which I love. I have exchanged 1/2 walnuts with almonds, added the dry peanut butter into the batter, added almond extract and almond butter (to make it more moist). So much fun to play with, and all my friends love it. Thanks!
