Marinated Vegetables

INGREDIENTS

½ of an organic zucchini

½ of an organic yellow squash

1 organic red pepper

2 organic carrots

1organic celery stalk

(and any other vegetables you want to add.)

1 avocado

Mixed organic greens

Marinade: 

½ cup organic balsamic vinegar

¼ cup organic extra virgin olive oil

1 tablespoon honey

2-4 minced garlic cloves

PREPARATION

1. Using a food processor either slice or grate the vegetables. Stir in the marinade and allow the vegetables to marinate for 6-8 hours.

2. Situate the greens on a plate, cube the avocado and place on the greens, cover with marinated vegetables and enjoy!
