Ingredients:
1 Cup quinoa
2 Cups water
1 large onion, chopped
2-3 cloves of garlic, minced
Vegetable broth
6 ribs of celery, chopped
1 15 ounce can of garbanzo beans
1 16 ounce package of frozen peas, thawed under running water

Preparation:
1. Prepare the quinoa according to package directions.
2. In a sauce pan stir fry onions and garlic in vegetable broth until softened.
3. Add Celery and carrots and stir fry until softened.
4. Blend peas in a blender or food processor until smooth.
5. Add chickpeas and blended pea mixture to stir fried vegetables.
6. Serve over quinoa.
Sounds good – but don’t see the carrots listed in the ingredients’ list~
