Using organic and fresh ingredients really enhances the flavor of this recipe

INGREDIENTS
1-2 tablespoons of olive oil
2 garlic cloves, crushed
1 small onion, chopped
½ cup diced carrots
½ cup diced celery
½ cup green pepper
½ cup red pepper
1 cup corn (if frozen, cook first)
1 can diced tomatoes
1 can black beans
1 cup quinoa, cooked per directions
½ tsp of sea salt
½ tsp pepper
1 tablespoon oregano

PREPARATION
1. Cool quinoa per package directions. Set aside
2. Sauté onions and garlic in large fry pan or wok slowly until just golden; 3-5 minutes.
3. Add carrots, celery and peppers and stir fry for 3 – 5 minutes on medium high heat.
4. Add tomatoes, corn, black beans, salt, pepper, oregano and reduce heat to low.
5. Add cooked quinoa and toss to mix, cover and cook on low for 3 minutes to heat.
