Roasted Red Pepper Hummus

INGREDIENTS

1 can garbanzo beans, drained

1 roasted red pepper

1 tablespoon lemon juice (add more to taste)

1 1/2 tablespoons tahini

2 cloves garlic, chopped (add more to taste)

1/2 teaspoon cumin, ground or seeds

1/4 teaspoon salt

DIRECTIONS

1. Add all ingredients together in a blender or food processor. Process until the mixture is relatively smooth.

2. To make an easier addition of garlic use the small part of a cheese grater.  Refrigerate for 1 hour to allow flavors to develop.

3. Can be eaten on chips, pita bread, with olive or tomatoes. Make a great addition to a sandwich.

Makes 8 servings.
