Healthy Banana Oat Cookies

INGREDIENTS

2 ripe bananas, peeled

1/4 cup your favorite healthy oil i.e. coconut

1 teaspoon vanilla

2 cups gluten free uncooked rolled oats

1 cup raisins

1 cup pecans

PREPARATION

1. Preheat oven to 350 degrees

2. Place bananas, oil, vanilla and 1 cup of oats into vitamix container and secure lid blend for 30 seconds.

3. Remove from Vitamix into bowl, add raisins, nuts and rest of oats to mixture and stir by hand. 

4. Form into balls, place on cookie sheet and press to flatten slightly.  Bake for 20 minutes……Yummy!!!
