Making Herb VinegarPart II …making Herb Vinegar this is a creative way to use up herbs if your garden is overflowing.  The vinegar can be used in salad dressing and or to marinate meat.  Not only does herb infused vinegar taste great on salads and veggies, it is easy to make, too….

Step one… After sterilizing the container, gather your fresh herbs.  Wash them and pat dry, then place in the container.  It is better to use too many herbs than too little.

Step two…  Add enough room-temperature vinegar to cover herbs.  Seal with a nonmetallic lid and let stand for at least 24 hours.  Strain and remove herbs.  Place fresh herbs in bottle, pour in strained herb vinegar and seal.  Store vinegar in a cool, dark place.
