Beets are a Super Food!!!

Beets are really a super food!  But I have to admit that they are not a favorite of mine.  I am always looking for a way to have beets in my diet where they taste good and this week’s recipe accomplishes that!

Did you know that beets can lower your blood pressure?  Drinking beet juice lowers blood pressure in a matter of hours.  One study found that drinking one glass of beet juice lowered systolic blood pressure by an average of 4 to 5 points. The benefit comes from the naturally occurring nitrates in beets, which are converted into nitric oxide in your body. Nitric oxide, in turn, helps to relax and dilate your blood vessels, improving blood flow and lowering blood pressure.

Could you use more energy?  Eat your beets!  Studies have found that those who drank beet juice prior to exercise were able to exercise for up to 16 percent longer.

Beets are great inflammation fighters.  Since inflammation is a major problem when it comes to disease, eat your beets.  Beets are a unique source of betaine, a nutrient that helps protects cells, proteins, and enzymes from environmental stress. 

Beets also have anti-cancer properties.  The powerful phytonutrients that give beets their deep crimson color may prevent cancer.  Research has shown that beetroot extract reduced multi-organ tumor formations in various animal models when administered in drinking water.

These beautifully colored root vegetables are rich in nutrients and fiber.  Beets are high in immune-boosting vitamin C, and essential minerals like potassium (essential for healthy nerve and muscle function) and manganese (which is good for your bones, liver, kidneys, and pancreas). 

Beets contain betalin pigments which assist your body in phase 2 detoxification process.  They also help to purify your blood and liver.
