Chocolate Almond Balls

Use all raw and organic ingredients, if possible.

Ingredients:

Use the almond pulp left over from making almond milk.

8-10 pitted and cut up Medjool dates (I have also used agave, honey, brown rice syrup and pure maple syrup all providing a bit different flavor, but all awesome.)

¼ cup of coconut oil (You may want to add a bit more if the mixture is too dry, but the dates or liquid sweeteners above will also moisten it.)

¼ cup of cacao powder or carob powder

¼ cup of cacao nibs – (these are raw cacao beans ….sort of like chocolate chips but better)

Combine everything in the food processor until well blended. Taste. (Hold off adding more sweet until and if you decide to add optional items.)

If you use the processor, be careful the optional items are not pulverized by the additional processing unless you want smaller pieces. If you want a chunkier version, fold in by hand.

OPTIONAL: (dried fruit will add sweetness so you may want to cut down on the dates)

Raisins, Dried cranberries, Dried cherries, Chopped walnuts, almonds, pecans, and cashews – Oh MY!

All should be coarsely ground.
