Kale Salad

INGREDIENTS

1 large bunch of organic curly kale

3 small organic lemons

½ cup raw, virgin, cold pressed olive oil

1 tsp. sea salt

3-4 cloves of garlic, chopped

½ to 1 purple onion, sliced very fine.

PREPARATION

1. Wash and spin dry the kale

2. Remove the stems

3. Place kale in food processor and process until in tiny pieces

4. Place kale in bowl

Into your blender:

1. Add juice of lemons

2. Add the olive oil

3. Add garlic

4. Put the olive oil, lemon, garlic, and salt into the blender and blend on high speed to make a frothy liquid

5. Pour the liquid over the top of the kale

6. Add in the onion

7. Mix well

8. Allow to marinate for at least two hours before serving

9. Variations

10. Add sprouted sunflower seeds for more nutrition and texture
