Apple Salad

INGREDIENTS

3 celery stalks, chopped
3 peeled apples cut in small chunks
Juice of 1 lemon
2 T orange juice
½ cup of dates
½ cup of walnuts or pecans

PREPARATION

1. Prepare 1st 4 ingredients. 

2. Add dates, ½ of nuts and pour ½ of lemon/orange juice over this.

3. Stir to coat.  Set aside. 

4. Prepare the other half of nuts and juice into a puree using a food processor or blender.  Add this to the salad and stir to blend.  

5. Serve as is or on a bed of lettuce.
