Cauliflower Millet Mash


2 TBSP. extra virgin olive oil
2 cups diced yellow onion
3 garlic cloves-minced
1 ½ tsp. sea salt
1 cup hulled millet
1 medium cauliflower, chopped
5 cups vegetable or beef broth
1 tbsp. ground flax seed
1 tbsp. olive oil
1/8 tsp. pepper


1. Sauté the onions and garlic with ¼ tsp salt in a large saucepan for about 5 minutes or until tender.

2. Add the millet, cauliflower, vegetable broth and ¼ tsp sale and increase the heat to high.  When the mixture begins to boil, lower the heat and simmer 40 minutes. Stir frequently.

3. Use a potato masher and mash up the cauliflower, it should be the consistency of mashed potatoes.

4. Mix the flaxseed, olive oil and pepper.  Add to the pot.  Then serve!

For some fun variations

Top with nutritional yeast
Top with chopped parsley

For leftovers

Sauté mushrooms and add to the millet mash.
