Raw Italian Marinated Salad

INGREDIENTS

Vegetables

2  large zucchini

1 large onion

1 red bell pepper

2 tomatoes

Use food processor to slice thin

Marinade

3 cloves garlic, chopped fine

1/2 cup fresh basil

1 Tbsp fresh thyme

1 tsp salt

1/2 cup olive oil

PREPARATION

1. Make the marinade by placing garlic, basil, thyme, and salt in a food processor chopping fine and adding the olive oil slowly.

2. Pour marinade over vegetables, massage, making sure they are well coated.

3. Marinade for 1 to 12 hours (better marinated at least 8 hours).

4. Strain the juice off vegetables (save for salad dressing).
