Deb's Heart Healthy Potato Salad

Ingredients:

4 large potatoes (if organic there is no need to peel them) cut up
2 TBSP of your favorite mustard  (I love champagne mustard with dill.  If you can’t find that then use dijon mustard and add fresh chopped dill or dried dill)
2 TBSP to start with of plain oil free (if possible) hummus to replace mayo
1/2 medium onion diced
1-2 stalks of celery chopped
1/4-1/2 tsp of Salt and Pepper or my favorite Herbamare

Directions:

1. Cut up potatoes and put into a large saucepan and cover with water.  Bring the potatoes to a boil and then cook for 10 minutes or until tender.

2. Drain the potatoes and place in a large bowl, add the remaining ingredients and adjust the mustard, hummus and seasoning to your liking.

I love this recipe and eat it without guilt.  Potatoes are low in calories, it is what people put on the potatoes that makes them either healthy or unhealthy.  If dill isn’t for you,, try parsley cilantro or rosemary.
