- 1 Organic Squash (Small to medium size)
- 1 Organic Red, Yellow, or Green Pepper, diced
- 1 Organic Portobello Mushroom, chopped
- 1 Organic Tomato, diced
- ½ medium onion, diced
- 2-3 cloves of garlic, minced
- ¼ cup fresh basil
- 1 jar of your favorite organic spaghetti sauce
- Mozzarella Cheese, grated
Directions:
- Preheat oven to 350 degrees
- Cut the squash in half, remove the seeds. Place the squash skin up on a parchment lined baking sheet and place in oven for 1 hour. (until you can pierce with a fork)
- Cut up the vegetables and stir fry them in either water or vegetable broth
- Add spaghetti sauce to vegetables
- Grate the cheese
- When the squash is done, spoon the sauce and vegetables into the center of the squash. Top with cheese and place under the broiler until the cheese begins to brown, then serve and enjoy
